Tasting Tasty: Chicken Satay Skewers

In todays edition of “Tasting Tasty”, I tried Tasty’s Chicken Satay Skewers! Personally, I love a good, spicy, peanut-y chicken satay. Who doesn’t?! The tender chicken, the sauce… come on! I came across it on YouTube from recipe video powerhouse, Tasty. It looked fairly simple and I was shocked it was a meal I hadn’t tried to make for myself earlier. I was at my local grocery store before you could say, “Ooooh yes!”
In “Tasting Tasty”, I typically try do my very best to follow the recipe exactly and save my adjustments for the second rendering, as to get a clear read on what I’m reviewing.
I made this recipe for me, my husband and my folks. We had it over jasmine rice with broccoli on the side and… it was scrumptious. We all loved it and it’s a recipe I have made twice since! The fresh red chilis and curry powder isn’t too spicy, but don’t be mistaken, there is a kick to it, even if it’s just a mild one. My dad wasn’t home for dinner the second time I made it so he requested that I make it the following week. None of us said boo!
The only problem I ran into while making it, was skewering the chicken. It seemed like more work than it was worth. When I made it the second time, I chose not to skewer the chicken, just placed it evenly on a baking sheet with parchment paper and it turned out just the same. I also added more toasted peanuts. The crunchy texture really added to the meal since it mostly had a soft consistency. So, I added another 1/4 cup of chopped roasted peanuts and a good handful of freshly chopped scallions, which we all agreed, was the right amount for us. We had sauce left over and used it over noodles with julienned veggies the next day. It was fabulous!
All in all, I absolutely recommend this recipe for a fun and delicious, warm-you-up dinner for the family.
